This is the set of stones that I use to sharpen my knives.
The Diamond Plate is fast and never require flattening so is ideal for setting bevels and doing 90% of the work during sharpening, however it will leave a large burr.
The Diamond Waterstone is fine and smooth, and gives the sharpener good sensitivity to what is happening at the knife’s edge and leaves a small burr.
The Leather Strop is coated with an extremely fine abrasive and will polish the edge and remove the burr completely, leaving you with a razor sharp edge.
Note:
The diamond stones should be used with water only.
The Diamond Plate will break in during the sharpening of the first 5 - 10 knives, and will be very aggressive to begin with, so use light pressure to avoid over sharpening your knife.
